Main Ingredients
- 1 kg Mixed Fish (cod, haddock, etc.) cut into chunks
- 500 g Mussels cleaned
- 2 Onions chopped
- 4 Garlic Cloves minced
- 2 Tomatoes chopped
- 1 l Fish Stock
- 1 cup White Wine
- 1 teaspoon Saffron
- 2 tablespoon Olive Oil
- to taste Salt and Pepper
1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until softened.
2. Add tomatoes and cook for another 5 minutes.
3. Pour in the fish stock and white wine. Bring to a boil.
4. Add saffron, salt, and pepper. Reduce heat and simmer for 20 minutes.
5. Add the fish chunks and mussels. Cook until the fish is opaque and the mussels have opened, about 10 minutes.
6. Serve hot with crusty bread.
