Main Ingredients
- 500 g white beans soaked overnight
- 2 duck legs
- 200 g pork belly cut into chunks
- 4 sausages
- 1 onion chopped
- 2 cloves garlic minced
- 400 g canned tomatoes
- 500 ml chicken stock
- 1 teaspoon thyme
- 1 teaspoon salt to taste
- 1 teaspoon black pepper to taste
Preheat your oven to 150°C (300°F).
In a Dutch oven, brown the duck legs and sausages. Remove and set aside.
Add the pork belly and cook until browned. Add the onion and garlic, cooking until softened.
Stir in the tomatoes, chicken stock, thyme, salt, and pepper. Bring to a simmer.
Add the soaked beans, duck legs, and sausages back into the pot. Cover and transfer to the oven.
Cook for 2.5 to 3 hours, until the beans are tender and the meat is falling off the bone.
