Dough
- 250 g Butter cold and diced
- 500 g Flour
- 200 g Sugar
- 2 Eggs large
- 1 teaspoon Vanilla Extract
Icing
- 200 g Powdered Sugar
- 2 tablespoon Water
- Sprinkles optional
1. Preheat the oven to 180°C (350°F).
2. In a mixing bowl, combine flour and sugar. Add the cold, diced butter and rub it into the flour mixture until it resembles breadcrumbs.
3. Add the eggs and vanilla extract to the mixture and knead until it forms a dough. Divide the dough into two equal parts.
4. Roll out each part of the dough on a floured surface to fit a baking sheet. Place one part on the baking sheet.
5. Spread the raspberry jam evenly over the dough on the baking sheet. Place the second part of the dough on top.
6. Bake in the preheated oven for 20 minutes or until golden brown. Let it cool completely.
7. Mix powdered sugar and water to make the icing. Spread the icing over the cooled pastry and add sprinkles if desired.
