  • 2 tablespoon Olive Oil
  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 cup Chopped Kale
  • 1 cup Cherry Tomatoes halved
  • 1 pc Avocado sliced
  • 1 tablespoon Lemon Juice
  • to taste Salt and Pepper

Instruktioner 

  1. 1. Heat olive oil in a frying pan over medium heat.
  2. 2. Add quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. 3. Stir in chopped kale and cook for another 5 minutes.
  4. 4. Remove from heat and mix in cherry tomatoes, avocado, and lemon juice.
  5. 5. Season with salt and pepper to taste. Serve warm.
