Instruktioner
1. Heat olive oil in a frying pan over medium heat.
2. Add quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
3. Stir in chopped kale and cook for another 5 minutes.
4. Remove from heat and mix in cherry tomatoes, avocado, and lemon juice.
5. Season with salt and pepper to taste. Serve warm.
