  • 500 g Potatoes peeled and boiled
  • 200 g Sugar
  • 100 g Butter softened
  • 3 Eggs
  • 1 teaspoon Vanilla Extract
  • 200 g Flour
  • 1 teaspoon Baking Powder

Instruktioner 

  1. Preheat your oven to 180°C (350°F).
  2. Mash the boiled potatoes until smooth.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the mashed potatoes and vanilla extract.
  6. Sift together the flour and baking powder, then fold into the potato mixture.
  7. Pour the batter into a greased baking pan.
  8. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool before serving.
