Main Ingredients
- 500 g Potatoes peeled and boiled
- 200 g Sugar
- 100 g Butter softened
- 3 Eggs
- 1 teaspoon Vanilla Extract
- 200 g Flour
- 1 teaspoon Baking Powder
Preheat your oven to 180°C (350°F).
Mash the boiled potatoes until smooth.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the mashed potatoes and vanilla extract.
Sift together the flour and baking powder, then fold into the potato mixture.
Pour the batter into a greased baking pan.
Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool before serving.
