Ingredienser

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1 cup Chopped rhubarb
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Buttermilk
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 Egg

Instruktioner 

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the buttermilk, vegetable oil, vanilla extract, and egg. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped rhubarb.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
